
Valerian Root Tea! (cold infusion)

One of my most prized plants that I have in my garden is Valerian(Valeriana officinalis). The flowers have an ethereal scent that transport me to clouds of relaxation. I like to dig up a small batch in the spring, and then again in the fall. I clean the roots, chop them, and place them in cool water overnight. The roots are delicate and I like to be gentle with them.
In this instance I ended up pouring the cold tea into ice cube trays and freezing them. It was such a treat to pop a few cubes in my evening water!
Valerian is known for its deep relaxing benefits and has been used for centuries to promote restful sleep.
